Banana Rice Pudding


2-4 ripe bananas, sliced

2 cups cooked brown rice

½ cup milk or soy milk

2 tablespoons brown sugar

¼ teaspoon vanilla extract

¼ teaspoon cinnamon

4 tablespoons Benefiber®*


Combine all ingredients except the Benefiber in a microwaveable dish and microwave on high for 3-4 minutes, or until the bananas are soft and the rice is heated through. Stir in the Benefiber. Serve warm or at room temperature.

Yield: 4-6 servings

*The maximum daily intake of Benefiber for adults is 5 tablespoons, for children 7-11 years of age 2.5 tablespoons. Ask your doctor before using with children 6 and under.
