Grapefruit with Rum Cherries


This recipe is for those 21 years and older.

¼ cup rum + ¼ cup water (or use ½ cup water and 1 teaspoon rum extract)

½ cup dried cherries

½ teaspoon cinnamon

4 tablespoons Benefiber®*

3 large or 6 small grapefruit


Place the rum, water, cherries and cinnamon in a small pan or microwave dish. Bring to a boil, remove from the heat, stir in the Benefiber and let stand while preparing the grapefruit.

Peel and section the grapefruit and remove excess white pith, and the membranes if desired. Cut each segment into bite-size pieces. Place in a serving bowl and stir in the cherry mixture.

Yield: 4-6 servings

*The maximum daily intake of Benefiber for adults is 5 tablespoons, for children 7-11 years of age 2.5 tablespoons. Ask your doctor before using with children 6 and under.
