Mushroom-Clam Sauce for Grains or Pasta


1 onion, chopped

2 cloves garlic, crushed

˝ cup bouillon

1 28-ounce can tomato sauce

pinch cayenne, or to taste

1 pound mushrooms, sliced

2 6.5-ounce cans chopped clams

4 tablespoons Benefiber®*

Freshly ground pepper to taste

2 cups light coconut milk or plain yogurt

6 tablespoons Benefiber®*

Cooked whole grains or pasta of your choice


Bring the onion, garlic and bouillon to a boil in a medium saucepan and simmer for 5 minutes. Add the tomato sauce, seasonings, mushrooms and the clams with their juice. Return to boiling, then reduce the heat and simmer 20 minutes. Stir in the Benefiber and add black pepper to taste. Serve the sauce over whole grains or pasta.

Yield: 4-6 servings

*The maximum daily intake of Benefiber for adults is 5 tablespoons, for children 7-11 years of age 2.5 tablespoons. Ask your doctor before using with children 6 and under.
