Potato Goulash

Ingredients

2 pounds medium red potatoes, cut in half lengthwise, then cut into ╝" slices

1 onion, chopped

2 cloves garlic, minced

2 tablespoons sweet paprika

1 teaspoon caraway seeds

1 teaspoon oregano

1 28-ounce can Italian plum tomatoes and their juice, broken up

2 teaspoons (about 2 cubes) bouillon granules

4 tablespoons Benefiber«*

Instructions

Combine all ingredients except the Benefiber in a large pot. Bring to a boil, reduce the heat and simmer, covered, 30-40 minutes or until the potatoes are tender. Stir in the Benefiber and a little water if the goulash is too thick.

Yield: 4-6 servings

*The maximum daily intake of Benefiber for adults is 5 tablespoons, for children 7-11 years of age 2.5 tablespoons. Ask your doctor before using with children 6 and under.
