Spicy Peanut Dip

You can make this as zippy or mild as you like, depending on the heat of your favorite salsa. Add hot sauce to your taste if you want to turn up the heat.


1 cup medium-hot salsa

4 tablespoons Benefiber®*

1 cup crunchy style peanut butter

2 tablespoons brown sugar

¼ cup lemon juice

2 tablespoons Worcestershire sauce

2 potatoes, cut into ½" slices

3 cups frozen corn

2 cups frozen peas

2 cups light coconut milk or plain yogurt

6 tablespoons Benefiber®*

Freshly ground black pepper to taste

Chopped cilantro or flat parsley for garnish (optional)


Combine the salsa and the Benefiber and mix well, using a fork to mash up any chunks of salsa. Combine with the remaining ingredients in a bowl. Serve with raw veggies.

Yield: about 2 cups

*The maximum daily intake of Benefiber for adults is 5 tablespoons, for children 7-11 years of age 2.5 tablespoons. Ask your doctor before using with children 6 and under.
